There are few things in life more comforting than the smell of chocolate chip cookies baking in the oven. What Makes Our Cookies Different?

The secret is in two simple things: brown butter and patience. Browning the butter adds a nutty, caramel depth that you just cannot get any other way. And chilling the dough — even for just an hour — makes all the difference between a flat, crispy cookie and a thick, chewy one.

What You Will Need

  • 250g butter (browned and cooled)
  • 180g white sugar
  • 160g light brown sugar
  • 2 large eggs + 1 egg yolk
  • 2 tsp vanilla extract
  • 320g cake flour
  • 1 tsp bicarbonate of soda
  • 1 tsp salt
  • 300g good quality dark chocolate chips
  • Flaky sea salt for topping

How to Make Them

Start by browning your butter in a light-coloured saucepan over medium heat, stirring constantly until it turns a deep golden amber and smells nutty. Pour it into a large bowl and let it cool for about 15 minutes.

Once cooled, whisk in both sugars until well combined. Add the eggs, extra yolk, and vanilla, and whisk until the mixture is smooth and slightly glossy — about 2 minutes by hand.

Fold in the flour, bicarb, and salt until just combined, then stir through the chocolate chips. Cover the dough and refrigerate for at least 1 hour, or overnight for the best results.

When ready to bake, preheat your oven to 180°C and line two baking trays with baking paper. Scoop the dough into generous balls (about 2 tablespoons each) and space them well apart. Sprinkle a pinch of flaky sea salt on top of each one.

Bake for 11 to 13 minutes, until the edges are set and golden but the centres still look slightly underdone. They will firm up perfectly as they cool on the tray.
